Healthy, Gluten Free Cookies




Ingredients


½ cup natural almond butter (no salt or sugar added)

1 can (15 oz) chickpeas, rinsed, drained and dried

1 tsp vanilla extract

¼ cup agave syrup

¼ tsp baking soda

1 tsp baking powder

2 pinches of salt


Optional mix-ins: chocolate chips, sprinkles, nuts


 

Makes 12 cookies


  1. Preheat oven to 350f.

  2. Mix all ingredients (except optional mix-ins) in a food processor until smooth and well combined. Fold in mix-ins afterwards, if desired.

  3. Drop dough onto lined cookie sheet using overflowing tablespoons.

  4. Bake the cookies for 15 minutes until bottoms are golden brown.
